Baked Apple Pie Porridge

Jenny Bäcklin

This isn't a complicated story. It's oats, eggs, apples, and POW vanilla casein mixed in a baking tray and popped into the oven. The result tastes like apple pie and provides a week's worth of snacks, waiting in the fridge to be reheated in the microwave.

If you're feeling lazy, just mix everything directly in the tray, stir, and put it in the oven. If you're feeling energetic, blend the oats into flour first – you'll get the smoothest consistency you've ever tasted from a baking dish. Don't grease the pan; it works perfectly well without it and saves you a whole thirty seconds of your life. That's just how this recipe developer rolls.

Serve with POW casein vanilla fluff for complete happiness. Replace the apples with grated carrots, and you'll get something that tastes like carrot cake with vanilla whipped cream. That works too.

Dry consistency is dull. Dry humor, however, is always welcome.

INGREDIENTS (for a baking dish approx. 25×35 cm)

  • 10 dl rolled oats
  • 10 dl milk of choice
  • 5 eggs
  • 3 dl egg whites
  • 2 scoops POW vanilla casein
  • 3–4 grated apples
  • 1–2 tbsp honey or sweetener
  • 2 tsp baking powder
  • A pinch of flaky salt
  • Cinnamon and/or cardamom to taste

Tip: Replace the apples with grated carrots and serve with vanilla fluff – it tastes like carrot cake with vanilla whipped cream.

INSTRUCTIONS

  • Preheat the oven to 180 degrees Celsius (conventional oven).
  • Lazy option: mix everything directly in the tray, stir well, and put it in the oven.
  • Energetic option: blend the oats into flour in a blender, add the rest of the ingredients, blend for a few more seconds, and pour onto the tray.
  • Bake for 20–30 minutes. It should feel soft but not runny when done. If it stays in too long, it will become dry, and dry is dull.
  • Serve with casein vanilla fluff, a little honey, and a dusting of cinnamon or crushed cardamom.
  • Store in the fridge. Cut a piece and warm it in the microwave when a craving strikes.
